Balsajo Black garlic puree
Balck garlic is white garlic that has been left fermenting for three weeks on a high temprature. This puree is solely made of the cloves of the fermented garlic, a very sweet and soft puree is the end result. The flavour is during this fermentation period completely transformed. Aroma's of soy and balsamic have developed in the garlic.
