Sardines a la Antigua in olive oil.
These Ortiz sardines are caught in Galicia. Ortiz buys these sardines in auction houses (lonjas) on the north coast of Spain. The sardines are carefully heated and filleted by hand. They are then cleaned and prepared according to a traditional recipe from 1824. The name "a la antigua" indicates that the products have kept their silver skin.
Ortiz uses very fresh fish which is then fried in virgin oil. After a few minutes of rest, they are packed by hand. Just like quality red wine, preserved sardines and tuna are only getting better with age, according to Ortiz!
