Raw brown almonds can be used for all types of applications, from sweet marzipan and bitter amaretti cookies to Indian curries and home-made almond milk.
The almond tree comes from the rose family and is a small one with the almond as its fruit. Almonds are officially fruit, but are counted as nuts because of their similar properties. Almonds are harvested in August. The shel of this 'kernel' is cracked exposing the seed of the kernel.
The difference with white almonds is that they are blanched. This treatment ensures that the brown membrane is soft and easy to remove.
